Since the keto mug cake posts and recipes were received with so much enthusiasm, I decided to add in one more mug cake post for readers. In this post I will discuss about baking with silicone bakeware, share some valuable information and share two more recipes with you.
If you have also become a keto mug cake lover like me by now and it’s become a regular part of your life, perhaps you should invest in some silicone bakeware. I have found that regular use of mugs or bowls (not marked heat resistant) in my microwave, led to them often cracking or breaking with repeated use. This led me to start experimenting with silicone bakeware and the results were not only great but often stunning as well!!!
Just a note of caution though…ALWAYS make sure the silicone mould/tray is scrupulously clean. Wash it in very hot soapy water to remove any residue, and then rinse and dry it carefully to make sure that no soap or water remains behind. This is particularly important if you’ve tried using the silicone cookware before, and especially if your results were poor and your cake became glued to the silicone case/tray.
Also ensure that you grease them first and use a heatproof glass support under it because they become flimsy to handle when hot. AND …make certain you remain in the kitchen whilst your bakes are being microwaved, because you have to keep checking them at regular intervals, as different microwaves have different wattages and baking times often vary.
When your bakes are done allow them to cool a minute or few, then stretch and pull the silicone away from your cake till loosened. Now place a plate or board over and topple to remove. MORE MUG CAKE RECIPES:
COFFEE MUG CAKE
2 tblsp cream/milk
2 tblsp coconut oil ( melted)
1tsp coffee (dissolved in 1 tsp hot water)
3 tblsp almond flour
1/2 tsp baking powder
1 tblsp xylitol + few drops sweetener
1 egg ( well beaten)
Mix together ingredients adding beaten egg in last. Mix again and pour into greased heatproof mug/bowl and cook in microwave 1min or so till done.
STRAWBERRY MUG CAKES (Makes 4 muffins or 2mug cakes)
2 Tblsp butter ( melted)
2 Tblsp xylitol + few drops liquid sweetener
¼ cup almond flour
1 Tblsp coconut flour
1/4 cup pureed strawberries
1/2 tsp baking powder
1/2 tsp vanilla
1 egg (well beaten)
Blend all the ingredients together well, adding in beaten egg last and mixing again. Pour batter into greased microwave bowls or mugs and bake in microwave till done.
