31. Banting Rotis 4: Cream Cheese Pancakes / Crepes


Pancakes used to be one of my favorites before reducing carbs and wheat, so finding a good low carb pancake /crepe recipe was really awesome, to have handy for when a craving for them for breakfast popped up! Instead of flour and eggs these recipes use cream cheese ( yes, you read right) and eggs.  
The texture of these pancakes are awesome! You could call them a cross between tortillas and crepes. And they work perfectly as a wrap, as they’re very elastic. So instead of store bought,  high carb wheat tortillas you can now make these wraps or tortillas.
This recipe batch works out to approximately about 3g carbs only….Oh My! What a great carb saving!

LCHF CREAM CHEESE PANCAKES:
2 eggs

75g cream cheese (softened)

1/3 tsp Baking Powder

1/3 tsp Vanilla

3 drops liquid sweetner

Add some butter or coconut oil to a nonstick pan and put it on medium heat. Use a silicone brush to coat the entire pan surface with it. Place the cream cheese ,eggs and rest of ingredients into a bowl or blender and beat until creamy. Allow the batter to sit for a minute or two to settle so that it cooks better. Pour into pan spreading it evenly. Cover with a lid, a minute or 2 till bottom is set and the top not watery. Carefully flip over n cook other side till freckled. Makes one big pancake or two medium sized ones.
Serve with berries, greek yoghurt, whipped cream, low carb ice cream, cinnamon or xylitol. Enjoy! 
(Ps. If your batter needs thickening, add a tsp or 2 of coconut flour)

RECIPE 2: LCHF SAVOURY CREPES
2 oz Cream Cheese

2 Large Eggs

1/3 tsp Baking Powder

1/3 tsp cayenne pepper

1/3 tsp ajmo, jeera, thyme or dried herb of your choice

Add some butter or coconut oil to a nonstick pan and put it on medium heat. Use a silicone brush to coat the entire pan surface with it. Place the cream cheese and eggs and rest of ingredients into a bowl or blender and beat until creamy. Allow the batter to sit for a minute or two to settle so that it cooks better. Pour into pan spreading it evenly. Cover with a lid, a minute or 2 till bottom is set and top not watery. Carefully flip over n cook other side till freckled. Makes one big savoury pancake/crepe or two medium sized ones. Serve with shredded chicken/steak and mayo or savoury filling of your choice. Roll up and enjoy.
