Almond flour, also known as almond meal, is an alternative to wheat flour for baking and cooking. The only ingredients in blanched almond flour are ground, whole almonds with the skin removed. If the skin is left on and the almonds are ground, it becomes known as almond meal. This flour is gluten-free, low in carbohydrates, high in fiber and a high source of protein.
Please be aware that the low carb versions of breads will never exactly taste the same as its wheat versions. Though almond flour is pretty expensive, the texture of bakes comes out closest to wheat breads, compared to other gluten free flours. Microwave 3 Minute Almond Flax Loaf
To make one small loaf you’ll need:
1 cup of flax flour/meal
8 tblsp water
1/2 cup of almond flour
1tsp baking powder
1 tsp salt
Mix all the ingredients together. Pour into a greased tupperware or silicone loaf mould and cook in microwave for about 3 minutes till set. Open it twice during cooking time to check on it and to prevent it overflowing.
