37.Mug Bread 4: More Mug Bread Recipes

Recipe 1: Almond Coconut Mug Bread
3 tablespoons almond flour

1 tablespoon coconut flour

1/2 teaspoon baking powder

1/8 teaspoon salt

1 large egg

2 tblsp coconut oil

2 tblsp water
Place the dry ingredients into a mixing bowl. Combine well. Add the oil and the egg to the dry ingredients. Mix well. Pour the batter into a greased heatproof mug. Microwave for 60 to 90 seconds till done.

Recipe 2: Almond Flax Mug Bread
3 tblsp almond flour

1 tbsp flax meal

1/2 teaspoon baking powder

1/8 teaspoon salt

1 egg, whisked

2 tbsp coconut oil
Place the dry ingredients into a mixing bowl. Combine well. Add the oil and the egg to the dry ingredients. Mix well. Pour the batter into a greased heatproof mug. Microwave for 60 to 90 seconds till done.

Recipe 3: Paleo Mug Bread 
2tbsp almond flour

1/2 tsp baking powder

1 egg

2tbsp pear/apple puree or coconut yogurt

Pinch of cinnamon

1/2 tsp vanilla 

Pinch of sea salt
Grease a microwave or oven proof mug. Mix almond flour, baking powder, beaten egg and pear/ apple puree or coconut yoghurt.  Add cinnamon powder, salt and vanilla.

Beat together lto form a thick batter Place the mug in the microwave and cook for around  60 to 90 seconds until the bread is firm and just cooked through. Allow to cool for a couple of minutes then loosen and turn out Slice and serve.
(You can make this vegan by swapping the egg for 1 heaped tablespoon of ground flaxseed mixed into 2tbsp water and allow it to soak for 5 minutes before using.)
