45. More LCHF Microwave Cookies

Baking in the oven might be the best method for baking cookies usually but using the microwave to bake a quick lchf cookie is just as good. Simply because it’s fast and yummy,  plus makes the lchf lifestyle more affordable. You know by now that natural sweeteners are not cheap and neither are most  banting friendly flours, so making a single serve lchf mug cookie, often makes it more affordable to make rather than making a large batch of bakes.

It’s best you know in advance that a LCHF microwave cookie is not going to be similar to the texture of a normal wheat cookie baked in an oven. For me it helps keep me good and  low carbing, when I’m trying hard not to indulge in high carb bakes. I also love that it takes a short amount of time too. And yes, I do eat them instead of meals sometimes and am amazed at how filling they are. I know that cookies are treats and not meals normally but if you check out the ingredients in a low carb cookie you will realise that they are actually powerhouses of nutrition, unlike many high carb wheat biscuits with their many dubious and inflammatory  ingredients.

*Please note your cookie will be thick and high  if you make it in a narrow bowl or mug so to make it more cookie-like, use a cereal type bowl as it is shallower and wider.*

Lchf Sugar Cookie
1 tablespoon butter or coconut oil (melted)

1 tablespoons xylitol

1/2 teaspoon vanilla

1/4 baking powder

2 tblsp almond flour

1 tblsp coconut flour

1 whisked egg yolk

1/2 tsp arabic gum or ghondar- powder(optional)
Some sprinkles or xylitol to sprinkle over cookie. (optional)

Mix first 6 ingredients together. Then add whisked egg yolk and mix again. Sprinkle gum arabic powder over and mix in. Put batter into a greased microwave bowl and flatten. Cook for about 45 seconds to a minute  till done.

Nut-Butter Cookie

1 tblsp nut-butter (or peanut butter)

2 tblsp almond flour

1/4 tsp baking powder

1 tblsp butter or coconut oil (melted)

1 tblsp xylitol

1/2 tsp vanilla

1 whisked egg yolk

1/2 tsp gum arabic or ghondar- powder (optional)

Mix first 6 ingredients together. Then add whisked egg yolk and mix again. Sprinkle gum arabic powder over and mix. Put batter into a greased microwave bowl and flatten. Cook for about 45 seconds to a minute till done.
Cool cookie and mix together  a mixture of 1/3 tsp nut- butter mixed with 1/4 tsp oil to drizzle over. (optional)
